Pastry creator Mindy Segal specializes in contemporary American cuisine, where she places a modern twist on traditional classics. Chef Segal refined her craft as pastry chef in some of the most prestigious kitchens in the country, with early professional positions stationing her at Spago, Gordon, Charlie Trotter’s, Ambria and MK.

Chef Segal received the James Beard Foundation nomination for Outstanding Pastry Chef in the Country in 2007, 2008 and 2009. She won the Jean Banchet award for Best Celebrity Pastry Chef in Chicago and was named Pastry Chef of the Year by Chicago Magazine. In 2008 and 2009 she served as guest chef for Outstanding in the Field, an event that draws together local farmers, chefs and food artisans to celebrate the connection between local farms and food served on the plate. Chef Segal will again serve as Outstanding in the Field’s guest chef in 2010. She was named Share Our Strength’s 2009 Chef of the Year for her dedication to Taste of the Nation, the country’s premier culinary benefit dedicated to ending childhood hunger with events in more than 45 cities across the U.S. and Canada.

Chef Segal most recently appeared on The Martha Stewart Show, Food Network Challenge! and First Look. Her work has been featured in O Magazine, GQ, Food & Wine, Travel + Leisure, The Chicago Tribune and The Washington Post.

Chef Segal’s solo venture, HotChocolate Restaurant and Dessert Bar, is the culmination of her 15 years of creativity and passion for the culinary experience. The urban café is a marriage of contemporary food and desserts inspired by seasonal, local ingredients. It features an innovative, ever-changing menu presented with gracious, polished first-class service in a friendly, inviting atmosphere. HotChocolate was rated three stars from the Chicago Tribune’s Phil Vittel and has been voted Best Dessert in Chicago by Citysearch and the Chicago Reader.
